DEVILED
CHOPPED CHICKEN
SALAD
Makes one main
course serving
Ingredients:
1 chicken breast half, boneless and skinless,
about 5 oz., or similar
amount tenderloins
¼ tsp kosher salt
Pinch ground black pepper
1 tsp olive oil
2 cups chopped romaine lettuce
2 cups chopped ice berg lettuce
½ cups chopped tomato
2 TBL spicy sweet dressing (recipe
follows)
2 TBL avocado, diced
1 TBL blue cheese crumbles
1 TBL cooked bacon, chopped
1 TBL red onion, thinly sliced
½ tsp parmesan cheese, grated
½ tsp parsley, chopped
Directions:
Preheat gas or charcoal grill. Season the
chicken with salt and pepper.
Brush with the oil and place on grill. Cook,
turning, until cooked
through, about 3 - 5 minutes per side. While
chicken grills, toss the
lettuces, tomato and dressing. Mound onto a
plate. Sprinkle remaining
ingredients onto the salad. Chop up the
chicken and add to the salad.
SPICY SWEET DRESSING
Ingredients:

cloves garlic
1 TBL kosher salt
½ TBL dry mustard powder
½ tsp crushed red pepper
¼ cup sugar
6 TBL red vinegar
¼ tsp dry oregano leaves
1/8 tsp ground black pepper
¾ cup extra virgin olive oil
Approx. 3 TBL cold water
1 TBL parmesan cheese, grated
Directions:
In food processor, combine garlic, salt,
mustard powder, red pepper,
sugar, vinegar, oregano and pepper. Puree
until smooth. With the
blender or processor running, slowly add ½
up of the oil, then add the
water, then the remaining oil, and finally the
cheese. Remove to a
container and chill 2-3 hours before using.
Stir before using.
