CHICKEN
INVOLTINI
Serves four
Ingredients:
Four chicken breast halves (about 5 ounces
each), boneless and
skinless, lightly pounded or butterflied
1 tsp kosher salt
¼ tsp ground black pepper
4 thin slices prosciutto (about ½
ounce
each)
8 thin slices provolone cheese (about
½
ounce each)
1 TBL extra virgin olive oil
1 cup mushroom sauce with lemon
(recipe
follows)
Directions:
Preheat
oven to 350 degrees.
On a piece of plastic wrap, place chicken; season on both sides with salt and pepper. Place one slice of prosciutto and two slices provolone on each chicken breast; roll up chicken. Use the plastic wrap to tighten into a uniform roll. Remove the plastic wrap and secure the seams of the chicken "roll" with 1-2 small toothpicks to prevent the chicken from opening up during cooking. Heat oil in medium sauté pan. Add the chicken rolls and cook, turning to lightly brown the outsides. Place the chicken in glass oven proof baking dish. Place in oven and bake approximately 20 - 25 minutes, or until chicken is done. Remove pan from oven and set aside for a few minutes. Warm sauce in a pan on the stove, or in microwave. Place the chicken on serving plates. Spoon approximately ¼ c. of sauce over each piece. Sprinkle the basil and parsley onto the chicken and serve with the lemon.
MUSHROOM SAUCE WITH LEMON:
Ingredients:

TBL extra virgin olive oil
8 oz. mushrooms, sliced into ¼"
slices
2 TBL minced shallots
1 tsp. finely minced fresh garlic
½ c. white wine
1 TBL wheat flour
1 c. chicken broth (low sodium or
fresh)
Pinch ground black pepper
¼ tsp. kosher salt or to taste
4 tsp. fresh lemon juice
Directions:
Heat a sauté pan or skillet to medium/high
heat. Carefully add the oil,
then the mushrooms. Let the mushrooms lightly
brown, then add the
shallots, garlic, salt and pepper. Stir well.
Add white wine; reduce
mixture by half. Stir in wheat flour, stirring
well to remove any
lumps. Add chicken stock and stir. Simmer on
low approximately 1
minute. Add lemon juice. Use sauce as needed.
